Add a var/essential_deps variable

After the Bullseye update, we don't have less in our Linux containers anymore.

We've added it to common dependencies, but it still isn't installed in projects like Firefox, in which we rewrite all the packages there.

Maybe we could have a set of essential packages, that we always include (and projects should never override).
