Switch from bullseye to bookworm for desktop platforms

Our containers are usually based on Debian stable (except for Linux, for extended binary compatibility).

Almost six months ago, bookworm became the new stable, so we should update to it.

Android will be problematic, because OpenJDK 11 didn't make into it.
