Major output change with cargo-sort 2.0.2

cargo-sort version 2.0.1 is completely happy with our crates/*/Cargo.toml files.

cargo-sort version 2.0.2 wants to rearrange them pretty severely.

I think that the right fix, for now, is to pin our CI to 2.0.1. We can decide whether we want to take the 2.0.2 changes or not at our leisure.
