Update bridgedb-metrics spec to align with version 2 of metrics format

While looking at #32117 (closed), I saw that a couple of lines on the bridgedb-metrics spec had not been updated to refer to the latest version 2 and could use some updates on the internal metrics that were added. Namely, I had trouble understanding what the internal metrics were measuring just from reading the spec, and the SUBRING field was not defined.
