Release new docker-hub image for 2.8.1

Version 2.8.1 is available. Also, a newer version of Go is required, currently the Dockerfile is configured to use Go v1.18, so I made a pull request that changes it to Go v1.21, see #14 (closed)

Currently, the Docker image is at version 2.6.0, which is 4 releases behind
