ideally, you would use the :latest tag and not have to worry about updating that tag ever again. that does mean following our major upgrades announcement (scoop: trixie is coming up in april), but that's your call. i'm going to propose retiring bookworm some time in 2026.
you should also look at chutney: it also uses our bullseye container image.
Please don't use the :latest tag, it's not supported for the base images and probably doesn't even exist. The correct tag to use for this would be :stable.
I think we want to define the version and bump it ourselves - there was quite a few changes to make just with this Bookworm transition and we don't want CI to change "under us".
