Add launch script for production

Jérôme Charaoui requested to merge launch-prod into main

Based on my understanding that tordonate is not a stateless app, these commits are intended to help deal with persistent data after codebase upgrades, and also introduces a gunicorn server option which is appropriate for a production deployment.
