upgrade alberti to bullseye ... er bookworm!

alberti could be a tricky part, so it's not part of the large bullseye upgrade batches (#40690 (closed) or #40692 (closed)).

just do the upgrade and see what happens, i guess, although while we're here, we might want to consider switching to bcrypt or yescrypt for the mail password hashing (#40492).
